In 2003, Henry Dorn ‘53 established a charitable gift annuity in memory of his wife and fellow alumnus Camille J. Shaffer Dorn ‘53. Camille’s 50-year membership in the American Dietetic Association inspired Henry to use his charitable gift annuity to fund the renovation of the Dietetics Teaching Laboratory in the College of Agriculture and Natural Resources. In 2009, Henry generously established a second charitable gift annuity that provided additional support to the teaching laboratories in the Department of Nutrition and Food Science.
The Henry J. and Camille Shaffer Dorn Dietetics Teaching Laboratory is used to teach Dietetics students about food service operations in a hands-on environment. Students are given the opportunity to serve as “manager” for a day and oversee a small-scale quantity food service; responsibilities include menu planning, purchasing, managing staff, and ensuring safety and sanitation. The lab is run as a restaurant, and approximately 50 members of the university community attend each lunch. The renovation allows an increased number of people to enjoy the lunches in a more pleasant restaurant-like environment.
The purpose of the Dietetics program at the University of Maryland is to prepare students with the knowledge needed by an entry-level dietitian and enable them to be successful in their future careers in the field. Mr. Dorn’s generous gift will assist the Department of Nutrition and Food Science in training quality dietitians for years to come.
